HEJ Coffee was conceived in Sweden and born in Bermondsey. Following a brief marriage to a large Swedish coffee conglomerate, the team left the big corporate world to go back to what they loved most. After the divorce they kept the name, the café and the strong Swedish values. It was the starting point to carry on the dream, continuing their passion for all things coffee.
Today they own artisan neighbourhood coffee shops, they roast their beans in-house at their London roastery in Elephant & Castle, and run a barista school helping to champion baristas to make better coffee. As wholesale coffee suppliers they also deliver coffee beans to businesses, restaurants and cafes.
Hej Coffee source coffee direct from farmers or though established trading companies, roasts the beans at their in-house roastery in London and through passionate craftsmanship they turn those green beans into something rather special


This course is designed to introduce the beginner to the wonderful world of speciality coffee.

What is speciality coffee? You will learn the difference between freshly brewed coffee and instant coffee. Understand coffees origins and its development throughout the world. Learn how to identify the basic structure of the coffee cherry and its species. Appreciate how climate, geographical position, altitude and soil conditions can change a coffee's taste profile. This course will outline the main steps of the roasting process and the equipment used, including the changes in which the beans go through and how acidity diminishes, and bitterness increases throughout the roasting process. You will learn how to recognise the range of different equipment and methods available to brew coffee. Plus lean all common drinks produced with coffee such as espresso, cappuccino, latte, Americano, filter/brewed coffee.
